20ml lemon juice

15ml honey syrup (1:1 honey + warm water)

60ml Soda Smith lemon myrtle tonic

2–3 fresh basil leaves (or thyme for a more herbal profile)

Method

Lightly clap the basil leaves in your hands to release aroma.

Add them to a shaker with honey gin, lemon juice, and honey syrup.

Shake gently with ice — just enough to chill without bruising the herbs.
