If you already have a press, or you are building your own, and want to add a spring - This spring is 40 mm wide and approximately 40 mm high when fully expanded. Used to press hard cheeses with up to 22 kg. Stop when the spring is fully compressed and this will present accidental over pressing of your cheese.
