What is Spiced mead?

Spiced mead (often called metheglin) starts with the classic base of fermented honey and water, then layers in botanicals such as cinnamon, clove, nutmeg, ginger, vanilla, or allspice. These additions shape both the aroma and the flavour profile, giving it a character closer to mulled cider or winter ale while still keeping honey at the centre.

Our Spiced mead has been made using our Ironbark honey and then blended with a mixture of spices to enrich the flavour

How the spices change the flavour

• Cinnamon — adds warmth and gentle sweetness.

• Clove — brings depth and a slightly resinous, festive note.

• Ginger — adds heat and brightness, lifting the sweetness.

• Nutmeg or allspice — round out the blend with soft, earthy spice.

• Vanilla — smooths the edges and enhances the honey’s natural richness.

Together, these create a drink that can be comforting and mellow or bold and aromatic, depending on the blend and intensity.
